We caught up with our gastropub manager for a quick chat about life behind the bar, busy services, and a few personal favourites.
What first got you into the world of hospitality?
I fell into it. My family has always been sociable with big meals, which led me into cookery courses. I started in kitchens, moved to front of house, then into management and area management before coming back to this side of things.
How long have you been with Bow for?
I have been working at Bow for 18 months.
What was your proudest moment so far?
Winning Best Pub at the Scottish Entertainment Awards. That was a big one for the team.
If you had to eat one dish on the menu forever, what would it be?
It would have to be steak. Simple, but you can’t beat it.
What’s your go-to drink after a long shift?
A bourbon Old Fashioned, usually with Maker’s Mark. It’s the one I always go back to.
What’s something customers would be surprised to learn?
I build pedal bikes. I used to own a bike shop with my brother, who designs and races bikes, so that’s always been a big interest outside of work.
Funniest thing you’ve seen on shift?
Probably someone trying to open a bottle of champagne with a corkscrew… it ended up going everywhere.
Biggest pet peeve?
People standing about doing nothing when there’s stuff to be done. There’s always something that needs sorted.
How would your team describe you?
They’d probably say a bit of a man child to be honest.
Secret to staying calm when it all kicks off?
Just remembering it’s only a job. No point getting worked up, you just deal with it and move on.
